Weekend Baking: Applesauce Raisin Delicious & Healthy (Nut Free) Bread ♥ Pan Rico y Saludable de Puree de Manzana y Pasas

(♥Para Español ver abajo♥)

Friday we got more snow.

It is so peaceful to watch it fall.  Soft, white, pure, snow.  Calming.

photo on instagram (follow @lisarenata)
And although we only got about an inch, this time it stuck around.

Which means it has also been very cold.  Brrr.  And when it's cold outside, I like to spend a lot of time in the kitchen keeping our bellies warm.

Does that happen to you? For some reason it does to me.

Since I've been feeling much better of late, and my energy has seemed to come back (at least for now) I am taking advantage.  My little chiquita had been asking for applesauce raising bread for who-knows-how-long now.  I just didn't have the energy, nor the enthusiasm to cook let alone bake, but this weekend was different.

On Sunday when my little guy noticed the bananas on the counter were nice and ripe he asked if we could make banana bread and I said yes.  Then when his sister asked if we could make her applesauce raisin bread too, I thought, what the heck- YES to the apple sauce bread too!

We baked, we savored, we had happy bellies and beautiful satisfied smiles.  What more can this mama ask for?  The simple things that make me happy.

Want to savor some too?

Applesauce Raisin Healthy (and nut free) Bread

Ingredients:
- 1 organic egg
- 1 1/4 cup applesauce (we make ours)
- 4 tablespoons butter (melted)
- 1/2 cup dark brown sugar (firmly packed)
- 1/4 cup raw sugar
- 1 1/2 cups regular flour
- 1/2 cup wheat flour
- 1/2 tsp ground flax seeds
- 2 teaspoons baking powder
- 1/2 a teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg (not a nut)
- 1/2 cup mixed gold and dark raisins

Makes 1 9x5 inch loaf or two mini loaves.

To make:

Preheat oven at 350 degrees F.

Begin by greasing your pan(s).  You will need two bowls.  One for the dry ingredients the other for the wet ingredients.  In the first bowl break the egg and beat lightly, then add the applesauce, butter and both sugars.  Mix ingredients and set aside.  On the second bowl, sift together both flours, flax seeds, baking powder, baking soda, salt, cinnamon and nutmeg.  Slowly fold dry ingredients into the applesauce mixture.  Mix, then add all the raisins.  Finally, pour into loaf pan(s) and bake for about 45-55 minutes (depending on your oven.)  You'll know it is ready when you insert a toothpick and it come out clean.  Let stand for a few minutes to cool off a bit, cut and enjoy!

Happy Baking!

El viernes nevó mas.

Es tan bonito ver caer la nieve.  Suave, blanca y pura. Relajante.

¡Corta y disfruta!

¡Que te diviertas cocinando!

lunch time

It has been four weeks since my little guy started kindergarten.  He is loving it, and so far (thank goodness) there have been no allergy scares.  For this I have to thank his teacher whom so cautiously checks everything that is around him, and also the rest of the staff that is constantly around him.  I just pray that it continues this way 'till the end of the school year.

Aside from my little guy loving school and our peace of mind, I also have to deal with most mamis every-day dilemmas, like:  WHAT TO PACK HIM FOR LUNCH?!

I want to keep his lunch nutritious, yet appealing enough so he will eat it all.

Before he started school I sat down with him and discussed as to what he would want in his lunch.  We came up with a list:

*bean and cheese burritos
*mini-pizzas
*our version of lunchables. Crackers with cheese, ham and tomatoes.
*cream cheese and jelly bagel sandwiches.
*and the lunch staple: ham, cheese, lettuce and tomato sandwiches.
All homemade, of course, and I would include a fruit, veggie and a treat with each lunch. Ah yes, and a drink.

(Please pretend you don't see the water marks on the planet box.  I seem to be in a hurry every morning and didn't even realize they were there until I edited the photos.  Oops.)
Five healthy lunches.  One for each day of the week.  My plan was perfect.  Or so I thought.  The sandwich was a hit, as were the cheese and crackers, and the bagel sandwiches.  But the burrito idea and mini-pizzas were soon scratch off our list.  "Too cold, mami.  I didn't like it," was his response after I asked him why he had not finished his lunch.  Well, then, now I had to revise my plan.

Since he didn't like the burritos because they were too cold by the time he had lunch, I started making him ham, cheese, lettuce and tomato rolls instead.  He loves them!  I also started packing zucchini bread slices (we are so running out of zucchini bread fast, since our harvest this year did so poorly), organic cheese sticks, organic yogurt and applesauce (which is our last batch and we need to get to the orchard to pick up apples soon!)  But aside from that I am stuck and can't think of any other varieties of food to include in his lunch. *sigh*

One thing for sure is that when he comes home (so far) his Planet Box is always (or just about) empty!  Making this mami very, very happy.

What do you like to pack for your kids lunch? Any suggestions?  Just keep in mind that it needs to be peanut, tree nut, shellfish and sesame seed free.

And in case you are wondering- I love his Planet Box!  It is perfect  for a 5 year old- keeping all his food separate, yet easy to open, without the fuss of opening individual packages/containers.  I also like that it helps keep less trash off the dump yards, keeping our planet just a bit healthier.  It is easy to clean.  And because it is so darn sturdy I know he'll be able to use it for years to come.  And once he gets bored of  it, I can spruce it up by ordering new magnets for the cover.  Pretty cool, don't you think?  I love, love, love it!  And so does my little guy, which really that is what matters the most.

a quick hello ♥ un saludito rapido

So I skipped Friday Favoritas this past week.  Shame-on-me!  I've been a bit (well, more like a lot) busy finishing up that tutu order I told you about, celebrating birthday's with friends, taking my little guy to soccer and the daily wonderful doings of my life.  Yes, busy indeed, but I am moving a lot faster now.  Getting ready for Easter and all the fun it entails.

That means I might not be around much to post, but I will try to pop by here and there.  No promises, okay?

On the mean time I want to share a little something I came up with the other day.

Growing up my sweet mami always made a huge breakfast.  Monday through Sunday, that was just the way things were and still are when ever you visit.   Pancakes, huevos rancheros, crepes, papas con chorizo (patatos with Mexican sausage), you name it.  Needless to say I also enjoy not just eating, but making large breakfasts for my family.  Well, for a while now I've been having a little trouble with my little guy because, out of the blue, he decided he no longer liked eggs.  Really?!!!  And he really isn't a picky eater.  He eats pretty much all veggies, mushrooms, olives, you name it.  But he did.  Anyway, I've been trying to find different ways to continue serving him eggs (I don't give up easily!) like in burritos which he loves, but that was about it.  Then the other day while making French toast, I had (what I think is) a brilliant idea.  Hehe.  Why not sandwich the egg between two pieces of French toast?  It was worth a try.  And-he-loved-them!  Success!!!  I'm sure all those yummy strawberries and nice coating of lechera (sweet condensed milk) on top, helped as well.  But I don't care, he ate it and I am happy!

What have you done to trick your little one to eat?

Oh crepes, oh crepes, how we love thee.  Especially how easy you are to make and wonderful to enjoy.

This is a recipe my mami passed down to me and oh do we enjoy so very often.  I mean the recipe couldn't be easier.  Yes it takes time to cook each single crepe, but other than that, it is a cinch to make.   So to Ms. Rakell ;) and all my other lovely friends that have asked for this recipe time and again...here it is!

You will need
1 cup of all purpose unbleached flour
2 eggs
1/2 bar of butter, melted
2 tbs of rum, white wine or pure vanilla (I usually use the latter)
1 cup of milk (give or take as needed)
1/2 cup of sugar

Necesitas
1 taza de harina
2 huevos

In a blender add the eggs, vanilla (or liquor), milk and melted butter.  Blend well.  Then add the flour and sugar.  If needed add more milk.  You want your mix consistency to be a bit on the watery side.

Set your crepe pan over medium/low heat (you do not need a crepe pan, my mom has never used one and they come out just as good, but I admit that I do love my crepe pan and large spatula thingy, especially the spatula thingy.  Makes the flipping much much easier).  Pour from the blender directly into the warm pan, about four tablespoons of mix.  Make sure to distribute the mix through out the pan.  You can do this, by picking up the pan and moving it side to side until you see just a thing layer of mix covering the pan.  (Sorry no pictures.  It is hard to take them while you are trying to do this.)  Unlike pancakes, it will cook quickly.  Once you see little holes on top and the mix consistency not too sticky, then flip the crepe over.  (This is the tricky part and it does take practice. But once you get it, it is the easiest thing in the world.)  To flip the crepe over, take your spatula and set it right on the middle of your pan.  Holding your pan handle with your left hand and the spatula with your right hand, turn the pan over the spatula.  Try not to let the ends of the crepe touch at all.  With a quick motion flip the crepe over and set back on pan.  Cook thoroughly.  Take out and place on plate, cooking sheet, what ever you like.  You are done.

Listo.

See not too hard, right?

Les dije, nada difícil ¿Que no?

Now you are ready to fill them with what ever you like.  We usually fill ours with cream cheese and then top them with cajeta (caramel made with goat's milk), either fresh fruit (if in season) or homemade jam.  And a large spoon full (or two) of whip cream.  Yum.

They are great as a snack too.  If there happen to be any left overs I just layer one on top of the other, then slip them into a zip lock bag and store them in the refrigerator.  Or if I know I will not be using them right away, or want to have some ready for a crazy busy week I make more and I freeze them. But make sure to add a sheet of parchment paper in between each crepe so they don't stick after thawing.  Reheat them in a toaster oven and walla!  ready to enjoy them again.

Enjoy and let me know if you made them.  I would love to hear if you like them and how easy (or not) they were to make.

Apple sauce.  What is there not to love?  I mean here at my house we eat apple sauce with everything!

Puré de manzana. ¿A quien no les gusta? Aquí en casa nos gusta ¡en todo!

*In oatmeal.
*Over pancakes.
*I add it to our pancake mix.  (Makes delicious apple pancakes.)
*Over pork.
*On toast.
*We use it as a dip for fruit, even carrots (yea my kiddos are weird like that), or organic chicken nuggets.
*Or wevsimply savor it all on its own.

*o simplemente solo.

There are so many ways you can eat it.  I am sure you can think of some more.  One thing for sure, is that around here our mason jars tend to look like this...

more often than full.

mas que llenos.
Here is a very simple recipe I use every fall to make our applesauce.  Really, making applesauce couldn't be any easier.  Once I learned (and tasted homemade applesauce) I was hooked and have not gone back.

Ingredients:
-As many apples as you like (I use about large 30 apples to fill my large 8 quart stockpot.  I find that a mix of sour and semisweet apples make for best applesauce.  I like to mix- granny smith, mcintosh, gala and fuji. But this year I had a huge load of jonagold and some granny smith. It turned out  pretty good.)
- ground cinnamon to taste (about 2 Tb.)
-ground nutmeg to taste (about 1 Tb.)**
-a dash of salt (if desired).

( **note: if you have a child with severe nut allergies, nutmeg is safe, for it is not considered a nut.  My son is extremely allergic and can eat this. Here is a link with more info:  http://www.allergicchild.com/tree_nut_allergies.htm)

Ingredientes:

Peel, core and cut each apple into small slices.  (I recommend investing in an
apple peeler/corer/slicer machine.  I have one and love, love, love it!) Add into stock pot and set on low heat.  Cover.  Stir frequently.  When you see some of the apple sauce getting mushy, then add the cinnamon, nutmeg and salt.  Let it simmer for a couple of hours making sure you stir.  Then depending on how smooth or lumpy you like you applesauce, you can either smash it with a potato smasher, or simply with a wooden spoon leaving larger chunks (that is how we like it!).

This makes enough applesauce for you to freeze or giveaway to family and friends.  (A great Holiday gift.)  I freeze mine in mason jars or the mason freezer containers.  I usually fill about 5 or so from each batch I make.  Enjoy through out the winter season or longer (it never seems to make it all the way to summer around here.  Darn!)

Jeje).

If you aren't familiar with the different apple varieties here is a great link http://www.allaboutapples.com/varieties/.

Si gustas mas información sobre las diferentes manzanas que hay puedes ir a All About Apples.

Have fun making applesauce and come back to tell me if you liked it.

Diviértete haciendo puré de manzana, y no olvides contarme si te gusto.

Tortillitas for me :: Tortillitas para mi

 Where was I?
¿Donde andaba?

California!

Did you guess right?
¿Adivinaste?

And while out there the kids and I got SPOILED!  There is nothing like getting spoiled by the tíos (aunts and uncles) and abuelos (grandparents)  and in my case- my papas.  Oh, yes! The best part was when I walked into the kitchen and saw my mami making these:

Homemade tortillas!!!!

¡¡¡Tortillas recién echas!!!

Have you ever had any?  They are to die for!  I am not exaggerating, really.  I love the delicious aroma that flows through the house while they are cooking over the comal and the taste- the sweet, sweet, warm taste that melts in your mouth as you take each bite- pure deliciousness.  Ay, now I want some!

¿Las has probado?

I know, your probably thinking what's the big deal, right?  Well, let me tell ya, it has been a long while since I took a bite of a warm, fluffy, butter-spread-all-over, rolled homemade tortilla.  Yea, I buy plenty of flour tortillas from the store and I even brought back, from my last trip to San Antonio, a cooler filled with uncooked flour tortillas- the closest I've found to homemade.  But homemade? My mom's homemade tortillas?!!  It has been a long time.

You see growing up she would make us tortillas twice maybe even three times a week.  My mom would make the dough just right (I think that is the hardest part), separate them into little balls and then my dad would help roll them out into that perfect circle (have you ever tried doing that?  Mine always look like a very lopsided star. LOL.)  As we got older and we started asking for more than one or two to eat, it got harder for my mom to keep up, so she started making them less frequent.  And then I got married and moved 3000+ miles away into the boonies where finding a place to get a homemade flour tortilla is just about as hard as finding a needle in a haystack.  Sigh.

Jajaja.) ¡Bua!

So when ever my mom decides to surprise me with a treat like that, I have to make a BIG DEAL (like jump up and down with joy) and take lots of pictures. Ahem.

Eje.

¡Gracias Mami!
